– 350g chorizo
– 2 red onions
– 1 tbsp garlic
– 125ml red wine
– 1 tbsp Worcestershire sauce
– 2 tsp oregano
– 1 tsp caster sugar
– 400g chopped tomatoes
– Bread dough
– Garlic butter
First, cook off the chorizo.
And then add in the onion and garlic. Cook for five minutes.
Then pour in the red wine. Reduce by half.
Followed by the oregano, Worcestershire sauce, sugar and seasoning.
Add in the chopped tomatoes and cook for a further 30 minutes.
Roll bread dough into balls, place them around a baking dish then clingfilm and prove for 30 minutes.
Place the chorizo bolognese in the middle, followed by the cheese.
Brush the bread with some garlic butter, then bake at 200 degrees Celsius for 35 minutes.
