– 2 x chicken breasts
– 75 g butter
– Parsley (finely chopped)
– 2 x garlic cloves (finely chopped)
– 100g flour
– 3 x eggs (beaten)
– 150g breadcrumbs
– 500ml sunflower oil
First, combine the butter, garlic and parsley, put onto clingfilm, roll into a sausage and chill for 15 minutes.
Next, chop up the chicken into nugget sized pieces.
Take the butter out of the fridge and chop up into small pieces.
Using the tip of a small knife, open up a hole in each piece of chicken, then fill with a piece of garlic butter.
Coat each piece in flour, then egg, then breadcrumbs – then repeat to double crumb.
Deep fry in the hot oil until golden brown – about 2 minutes – then pop in a hot oven for 5 minutes.
