– 16 tortillas
– 1 Red Pepper
– 100g Wensleydale & Cranberry
– 150g cheddar cheese
– 50g butter
– 50g plain flour
– 500ml milk
– 150g Red Leicester
– Crushed Doritos
First, cut out star shaped nachos from the tortilla. Bake for 6-8 minutes at 200 degrees Celsius.
Layer the nachos, turkey, red pepper, Wensleydale & cranberry.
Followed by the cheddar cheese and repeat. Bake at 200 degrees Celsius until golden.
For the nacho cheese, melt the butter and whisk in the flour.
Gradually add in the milk and whisk until a sauce is formed.
Pour in the cheese and cayenne pepper and mix.
Pour the nacho cheese on top of the nachos and top with Doritos.
