– 10 x small sweet chillies
– 200g cream cheese
– 150g mozzarella
– 100g crispy bacon bits
– 1tsp black pepper
– 150g flour
– 3 x eggs (beaten)
– 200g breadcrumbs
First, combine the cream cheese, bacon bits, mozzarella and black pepper in a large bowl then transfer into a piping bag.
Cut the stalk ends off the chillies and hollow them out.
Pipe the cream cheese mix into each chilli then freeze for 30 minutes.
Coat each chilli in flour, then egg, then breadcrumbs – and repeat.
Deep fry at 180 degrees celsius until golden (2-3 minutes) then bake for 10 minutes at 180 degrees celsius.
