– 1 tsp baking powder
– 140g buttermilk
– 90g butter
– 1 tbsp pumpkin spice (equal parts cinnamon, nutmeg and ginger)
– 1 tsp bicarbonate of soda
– 4 eggs
– 50g brown sugar
– 300g canned pumpkin
– 350g plain flour
– 150ml milk
– Vanilla ice cream
– Maple syrup
First, mix together the flour, brown sugar, baking powder and bicarbonate of soda. Then add in the pumpkin spice and stir.
In a separate bowl whisk together the pumpkin, eggs, buttermilk and melted butter.
Add the dry ingredients to the bowl of wet ingredients and fold together.
Pour on a portion of batter into the waffle maker and cook at a high heat for five minutes.
Finish with ice cream and maple syrup.
