– 200g Digestive biscuits
– 100g butter (melted)
– 300g caster sugar
– 3 x eggs
– 3 tbsp plain flour
– 5 tbsp lemon juice (about 3 lemons worth)
First, blitz up the digestive biscuits into a fine crumb and mix the with the melted butter.
Press the mixture into a lined tray and refrigerate for 30 minutes.
In the meantime, to make the topping, combine the sugar, eggs, flour and lemon juice and whisk until thick – about 5 minutes.
Pour the lemon mix onto the biscuit base then bake at 180 degrees celsius for 15-20 minutes – until the top is just set.
Leave to cool completely then slice up.
