For the base:
– 125g self raising flour
– 1/4 tsp bicarbonate of soda
– 115g butter
– 50g caster sugar
– 50g brown sugar
– 1 egg
– 1/2 tsp vanilla extract
– 300g chocolate chips
For the cheesecake filling:
– 600g cream cheese
– 150g caster sugar
– 180ml double cream
– 2 tbsp vanilla extract
– 150g chocolate chips
First, mix together the flour and bicarbonate of soda.
In a separate bowl whisk together caster sugar, brown sugar and butter.
Then add the egg and 1/2 tsp vanilla extract. Mix.
Add in the bowl of flour and chocolate chips. Whisk until the cookie dough is formed.
Fill base with cookie mix and bake for 15 minutes at 175 degrees celsius.
For the cheesecake mix, whisk cream cheese, before adding sugar.
Then add in the cream and 2 tbsp of vanilla extract and whisk.
Fold in 150g of the chocolate chips.
Fill the tin with the cheesecake mix and set in the fridge for 1 hour.
To serve, top with cocoa powder and toffee sauce.
