– 250g plain chocolate digestive biscuits
– 150g unsalted butter
– 400g soft cheese
– 300ml double cream
– 80g caster sugar
– 100g white chocolate
– 200g Oreo cookies
First, crush the digestive biscuits in a bowl.
Then melt the butter before pouring it in with the biscuits and mixing well.
Pour the biscuit base into the tin and spread out evenly. Chill in the fridge for one hour.
For the cheesecake mix, first melt the white chocolate. Once its fully melted allow to cool at room temperature.
Meanwhile, whisk double cream until thick.
Then in a bowl combine soft cheese, double cream, sugar and white chocolate.
In a separate bowl crush 150g of the Oreos and add into the cheesecake mix.
Spoon the mix into the tin and spread evenly. Put in the fridge for two hours to allow it to set.
Crush the rest of the Oreos and sprinkle on top.
