– 2 duck legs
– 1 tbsp five spice
– 1 tsp salt
– 5 cloves of garlic
– 2 tbsp soy sauce
– 2 tbsp honey
– 3 potatoes
– 2 spring onions
– Small handful of coriander
– Garlic mayonnaise
– Hoisin sauce
– Small handful of peanuts
First, rub five spice and salt into the duck legs.
Chuck in the crushed garlic cloves and roast for 2 hours at 160 degrees celsius.
Once cooked and cooled, scrape all the duck leg meat into a bowl.
Peel and slice the potatoes into chips. Cook in oil at 130 degrees celsius until the potato is cooked through.
Then cook again at 180 degrees celsius until crispy.
In a frying pan, glaze the duck in honey and soy sauce.
To serve, plate up your chips.
Layer with the duck first, then spring onions and coriander.
Then squeeze on all your sauces.
Finally, sprinkle over a few peanuts.
