Here’s How To Make Cookie Dough Brownie Stacks

Ingredients:

For the brownie:

– 180g dark chocolate
– 180g butter
– 275g caster sugar
– 3x eggs
– 40g cocoa powder
– 80g plain flour

For the cookie dough:

– 115g butter (softened)
– 170g caster sugar
– 400ml condensed milk
– 460g plain flour
– 75g chocolate chips

To finish:

– 300g dark chocolate
– 200ml double cream
– Mini cookies

Method:

First, for the brownies. Melt together the dark chocolate and butter, stir in the sugar, eggs, cocoa and flour, pour into a lined tin and bake at 180 degrees Celsius for 30 minutes.

While the brownies are cooling, make the cookie dough. Combine the butter, sugar, condensed milk, flour and chocolate chips and kneed into a firm dough.

Roll out the cookie dough to about 4mm thick and cut into discs, and once the brownie has cooled, cut out discs the same size.

Melt 100g of the dark chocolate and brush some onto a disc of cookie, place a disc of brownie on top, brush that with chocolate and add another disc of cookie dough.

To make the ganache, heat the double cream until just about to boil, then pour over the remaining 200g of dark chocolate and whisk until smooth and shiny. Allow to cool slightly then pour over the stacks and add a mini cookie to decorate.
