Here’s How To Make Pesto Chicken Lasagne

– 3x chicken breasts
– 1tsp salt
– 2tsp garlic powder
– 1tbsp oregano
– 1tbsp onion powder
– 1tbsp dried basil
– 1tbsp olive oil
– 100g grated parmesan
– 1x jar green pesto
– 400g ricotta
– 2tsp black pepper
– 1x bag spinach (wilted)
– 100g mozzarella
– 100g grated cheddar
– 6x lasagne sheets
– 1x bunch fresh basil



Coat the chicken breasts in the salt, garlic powder, oregano, onion powder, dried basil and olive oil and bake for 20 minutes at 200 degrees celsius.

Dice the chicken, then add the parmesan, pesto, ricotta and black pepper and stir it all together.

Spoon a layer of the chicken mix onto the base of a lasagne dish followed by some wilted spinach, mozzarella, cheddar cheese and torn basil leaves, then add three lasagne sheets.

Repeat, finishing with a layer of cheese on top then bake for 30 minutes until golden brown all over.
