Here’s How You Make Mexican Lasagne
– 1/2 red onion (roughly chopped)
– 1/2 white onion (roughly chopped)
– 1 red pepper (roughly chopped)
– 1 chicken breast (cut into strips)
– 25g butter
– salt & pepper
– 1 pack of fajita mix
– 400g chopped tomatoes
– 7 tortilla wraps
– 2 packs of Doritos
– 70g grated mozzarella
– 80ml guacamole
– 80ml sour cream
– 70g cheddar
– 1 small jar of jalapeños
First, fry the onions and pepper in a saucepan for five minutes.
Then brown the chicken strips, before seasoning with salt and pepper and adding in a knob of butter.
Add the fajita mix and chopped tomatoes. Allow to cook down for 20-25 minutes until the chicken is cooked through.
Coat the inside of a baking dish with one tablespoon of oil, before layering four tortilla wraps.
Add in the chicken mix and top with mozzarella, jalapeños, Doritos, sour cream and guacamole.
Then cut 3 tortilla wraps into squares to fit on top.
And repeat the process.
Bake in the oven for 10-15 minutes until golden brown.
